Icelandic curly peters recipe and books

225g moist brown sugar
225g butter or margarine s at room
1 egg
1 tablespoon warmed syrup
1 teaspoon cinnamon
110g chopped walnuts
110g raisins
225g self raising flour

Pop them into an airtight tin as soon as they are cold then re crisp them in the oven later if you feel they need it.

Pre heat the oven to gas mark 4 350F 180C.
Youll also need two large baking sheets (greased).
First of all cream the butter and sugar together till you have a pale fluffy dropping consistency then break in the whole egg and add the syrup.
Stir these in using a wooden spoon until the mixture is quite smooth.
Now sift in the flour and cinnamon and gradually fold this in finally adding the walnuts and raisins.
Then drop rounded
teaspoonfuls of the mixture on to the baking sheets about 10 on each one (this wont use up all the mixture but see below).
Bake this first batch of biscuits for about 20 minutes during which time they will have spread out quite a bit.
Take them out of the oven then after a couple of minutes remove them from the baking sheets to a cooling tray.
Then finish off the rest of the mixture as above.

Makes 3 4 dozen

50 golden syrup
110g margarine
350 plain flour
275g sugar
2 teaspoons powdered ginger
1 teaspoon bicarbonate of soda
1 egg
plnch of salt

preheat oven to gas mark 4 350F 180C.
You will also need 2 well greased baking sheets.

The best way to weigh golden syrup is to weigh a small saucepan first then spoon the syrup in up to the required weight
Then add the margarine to the saucepan and melt the two together.
Now sift the flour sugar salt ginger and bicarbonate of soda into a mixing bowl then beat the egg and stir that and the syrup mixture into the dry ingredients.
Mix well until you have a smooth dough.
Then take rounded teaspoonfuls of the mixture and roll them into small rounds put these on to the baking sheets allowing room for spreading and bake them for 15 minutes.
Then let them cool completely on the baking sheet before removing and storing in an airtight tin.

Makes 24 biscuits
