Check our books section as well! avocado sorbet 3 large or 4 small avocados (about 450g of flesh) 225g peeled cucumber 3 tablespoons fresh lime juice (or lemon if not available) 3 level tablespoons caster sugar To serve Radicchio or lettuce and fresh mint Halve the avocados and remove the stone then quarter them and peel the quarters. Roughly chop the flesh and put it into a food processor or liquidiser and use a teaspoon to scrape off all the very green part next to the skin and add this as it does wonders for the colour. Roughly chop the cucumber and add this to the avocado then add the lime juice and sugar. Now simply puree the mixture until it is absolutely smooth and lump free. Pour it into a shallow polythene container and freeze for a couple of hours. Then mash it with a fork to break it down and smooth it out before it solidifies. Freeze it again until it is solid. To serve remove it from the freezer and defrost for about 2 hours at the bottom of the fridge. Fork it again to break the sorbet down to make it malleable. Arrange some radicchio or lettuce leaves in the base of four (or six) wine glasses spoon the sorbet on top and garnish with a sprig of fresh mint. To add to its aesthetic qualities you could chill the glasses before serving. This would be the perfect start to a meal that includes a very rich main course especially if the weather is on the warm side.
