thick vegetable soup
1 large onion
1 large carrot
2 celery sticks
3 tomatoes skinned
50g streaky bacon derinded
2 tablespoons oil
2 cloves garlic crushed
1.75 litres water
4 sage or basil leaves chopped
75g rice (Small pasta may be used instead of rice.)
2 tablespoons chopped parsley
2 tablespoons grated Parmesan cheese
salt and pepper
Shred the cabbage; chop the other vegetables and the bacon.
Heat the oil in a large saucepan add the bacon onion carrot celery and garlic and fry gently stirring frequently for about 10 minutes.
Add the water bring to the boiland add the cabbage courgettes tomatoes sage or basil and rice.
Continue cooking gently for 20 minutes.
Stir in the parsley cheese and salt and pepper to taste.
Serve with extra Parmesan cheese and crusty bread.
